SCAE World of Coffee 2012: sipping a coffee to the music of a Viennese waltz
The world capital of music was host to SCAE World of Coffee 2012 between 13 and 15 June 2012.
The event, in which Rancilio Group Spa also took part, is considered one of the most important on an international level for discovering the latest trends in the coffee sector and the techniques of baristas and latte artists.
With over 10,000 visitors, SCAE is an exceptional showcase for coffee roasters, producers and distributors of equipment for espresso-based beverages, as well as for professionals in the restaurant trade.
The event also hosted the World Barista Championship, a competition for baristas from all over the world which consists in the preparation of 4 espressos, 4 cappuccinos and 4 ?personal drinks? in only 15 minutes, and in accordance with rigid international standards.
In the course of the competition, the baristas have to pay attention to preparation technique, the quality of their beverages, the ingredients used and also the staging, since they accompany their demonstration with background music aimed at creating a welcoming atmosphere, in what amounts to a real stage performance.
The commission of the WBC final is composed of 30 qualified judges, who perform an extremely important task: assessing the baristas? performance from a sensory, technical and creative point of view. The choice of personal drink allows the participants to express their talent and show the judges their knowledge of the world of coffee.
In this edition there were 52 baristas competing.
As a frame for the competition during the busy days of the trade fair, there were the new products presented by those working in ho.re.ca.
Rancilio Group took part in the trade fair with a different approach from usual, an ?active?, experimental stand, entirely dedicated to the new revolutionary technology of Xcelsius ? temperature profiling during espresso brewing.
Organised with four demo stations, each managed by qualified baristas from different nations, the stand was a workshop offering demonstrations and the chance to taste various types of coffee, both single-origins and luxury blends, brought by the visitors themselves, coffee roasters and baristas.
Those who were interested could try out the profiling technique and the revolutionary taste of espresso brewed using Classe 9 Xcelsius machines with temperature profiling.
Precisely because of the international nature of the event, Rancilio Group took part in collaboration with its branch offices, receiving widespread praise for the Xcelsius system and the traditional Classe 9 machine.
The barista champions, skilled, trained professionals, young entrepreneurs of themselves, are important figures, who can promote and transmit coffee culture in the world.
Rancilio Group recognises the importance of listening and talking to the new generation of baristas, in order to achieve improvements within a relationship of mutual collaboration, all aimed at spreading an international, informed culture of quality espresso.
